We have long been fans of chopping up zucchini and throwing it in our spaghetti sauce. The kids would gobble it up and call them meatballs. We never bothered to correct them. When I did Whole30 (read about that here), I became obsessed with zoodles. I bought the Veggetti Spiral Vegetable Slicer (affiliate link), because it was cheap and had good reviews. I would warm my spiraled zucchini in a skillet with some olive oil and eat it just like spaghetti. This particular sauce had shredded chicken and mushrooms thrown in too. YuM!
It was simple, cheap and yummy. You can find more about what I ate on Whole30 here. Since gardens will be overflowing with zucchini, I thought it would be fun to share more delicious ways to eat up this summer squash.
What is your favorite zucchini recipe? Any of these you are anxious to try. I’m definitely going to try some of the chocolate ones on the kids–can’t beat sneaking in the healthy stuff!
