I wish I could explain to you just how exciting it was to pick food from our very first garden (check out the first garden post here). Kind of crazy that I didn’t even know how the various things would mature, grow and produce vegetables. Literally no gardening knowledge (AT ALL!), some organic soil, water and sunshine is all it took. The best part was getting the kids in on the action and having them excited about eating healthy. Heck, it even made me wanna cook.

Quinn ate the entire green pepper. All I got was a nibble.
For dinner we made whole wheat linguine. Easier for the kids to pick up then regular old spaghetti We are really fancy like that and that is how we roll. Then we chopped up that zucchini and threw it in the pot with our sauce and let it simmer.
It was seriously delicious and kids gobbled it up. Yes, I say kids, since I have two. Somehow one only worked his way into all the photos. Eleanor was most likely napping, but I promise you she enjoyed this meal. The girl loves to eat!
Ross and I thoroughly love patting ourselves on the back. If we got a dollar for every time we said, “Man, this zucchini is bigger than the zucchini’s you can buy in the store” we would be rich have like ten dollars. For reals. Doesn’t take a whole lot to get us going around here.
If you have been around the blog for a while you probably know I don’t so much like cooking. I love eating though. I want to like cooking, I do, but I am just so lazy. By the time 5 o’clock rolls around I am done. I just want to be fed. This probably makes me a lesser mom or woman or both. I dunno. But WHEN we win the lottery I am hiring a chef, for sure. The cool thing about the garden is I get all hyped to use my vegetables. I have another zucchini that will be ready any day now and I am already brainstorming what I am going to do with it.
