We have long been fans of chopping up zucchini and throwing it in our spaghetti sauce. The kids would gobble it up and call them meatballs. We never bothered to correct them. When I did Whole30 (read about that here), I became obsessed with zoodles. I bought the Veggetti Spiral Vegetable Slicer (affiliate link), because it was cheap and had good reviews. I would warm my spiraled zucchini in a skillet with some olive oil and eat it just like spaghetti. This particular sauce had shredded chicken and mushrooms thrown in too. YuM!
